• To further the knowledge, understanding, and appreciation of food, wine, and the arts of the table in the tradition of August Escoffier.
  • To promote the education and advancement of, and to offer advice and assistance to, fellow members and women in careers related to food, wine, and hospitality, and disseminate such information as advances the purposes and interests of the Chapter.
  • To raise and disburse funds for professional food, wine, and hospitality scholarship funds and other worthy projects.
  • To promote high standards in the supply, preparation, and service of food and wine.
    To maintain affiliation with Les Dames d’Escoffier International and to respect of its code of ethics.

PARTY ON THE PATIO WITH LES DAMES D'ESCOFFIER

On Sunday, September 20th, take a late summer vacation at the Party on the Patio, courtesy of the Houston Chapter of Les Dames d'Escoffier.  Our roster of talented of talented chefs will feature  an assortment of fabulous foods - from Argentine barbeque, crab cakes, Japanese temptations, paella, wood fired pizzas, delicate soups, decadent desserts and much, much more.  Live music from Houston's own Moodafaruka, wines, and mojitos made from local rum distillery Railean Rum will soothe away the end of summer blues.

Led by Marian Tindall, members of Les Dames d’Escoffier, Houston who contributed to this recently published cookbook will demonstrate recipes and food styling; discuss Escoffier’s contributions and importance to the modern kitchen; and give tips on pairing food and wine. Enjoy: Walnut Fennel Tarts; Minestrone with Butternut Squash & Kale; local caterer Mariquita Combes’s Quail Escabèche; and an irresistible finale, Peach Tree Country Kitchen’s Bread Pudding with Jack Daniel’s Caramel Sauce. Merrianne Timko will reveal little known facts about Escoffier; Robyn Tinsley, editor of The Wine Skinny, will chat about the pairings; and food stylists Julie Hettiger and Carla Buerkle will share their expertise.

Les Dames Cookbook Finalist for IACP Cookbook Award
The Les Dames cookbook, Cooking with Les Dames d’Escoffier: At Home with the Women Who Shape the Way We Eat and Drink, has been nominated as a finalist in the Compilations category of the 2009 IACP Cookbook Awards. 
 
“To be selected as a finalist from the over 400 cookbooks submitted to the International Association of Culinary Professionals is a great honor,” says Gary Luke, President of Sasquatch Books. “We're so proud of you and your book! And our special congratulations go out to Marcella Rosene and Pat Mozersky. Our fingers will be crossed until April 4 when the winners will be announced.”
 
The book contains more than 100 recipes from Dames across North America, representing all 27 chapters. It was published by Sasquatch Books in October, 2008.
